羧酸盐的结构通式为R-COO-M,R表示烃基,M表示阳离子(绝大部分为金属离子,也有铵根离子)。羧酸盐是由羧酸和碱发生中和反应得到的,一般对应的羧酸酸性相对于无机强酸酸性较弱,可以向羧酸盐的溶液中加入稀盐酸,然后加入乙醇加热,如果能够有香味出现,那么说明发生了酯化反应也就说明了最初的盐类为羧酸盐。
